Description
Our grapes of sangiovese are hand harvested early in the morning from the fresher part of the slope of our vineyards in Levunovo. One night in a cool room at 8 degrees celsius.
The morning after the full clusters are pressed at low pressure with a pneumatic press WITHOUT ANY ADDICTION OF SUPHITES.
The juice is clarified by cold for one day. After this the fermentation starts and goes for 25 days at 16 degrees celsius.
Three months of sur lees aging with daily batonnage.
In the glass rosaspina is shining of light salmon/peach colour, with fascinating floral and fruity bouquet of violet and white peach. Medium body with round mouthfeel and a very pleasant savory aftertaste
