Description
Blanc de noir wine, made from perfect ripe shiroka melniska grapes
Hand harvestend in the early morning in 10 kg boxes.
One night in a cold room at 5 degrees. The morning after the FULL CLUSTERS are pressed in a pneumatic press at a maximum pressure of 0,8 bar.
The free run juice is clarified only with low temperature.
The fermentation runs at 16 degrees for two weeks.
It will follow a daily batonnage on the fine lees for two months.
In February afrer Trifon Zarezan, we bottle the wine withoit any clarifing agent, only with a large filtration.
The white sand shows a light yelliw pale , with an intense and distinctive and hunic bouquet of white flowers, fruity with a fantastic hint of avocado sourrounded by a spicy note of white pepper and butter.
Medium body with a very balanced acidity. Dry but round taste.
Perfect pair for a wellcone back home wine, aperitive or soup and pastas.
